Sunday Dinner: 33 Omelet recipes

In the midst of record breaking hot temperatures, I’m in no mood to cook. It’s even uncomfortable to sit here typing on my laptop. But if I don’t want to order take out, what can I do?

Omelets!

Low cooking time, low prep time, high nutritional content. None of these recipes use the oven at all. If you’re watching fat, use egg substitute in place of some or all of the eggs you use. This can be an extremely low carb meal, too, if that’s what you need. You can do almost anything with omelets. If you’re afraid you can’t keep your omelet together, don’t worry: just chop it all up and call it a “scramble.”

And don’t be put off if you don’t like eggs – it’s easy to overwhelm the flavor and texture of the eggs with other ingredients, giving yourself all that nutrition without the parts you don’t like.

(There are two accepted spellings of omelet/omelette, depending what country you’re in. I’ve used the US spelling, but left the -ette spelling intact in links to people’s recipes since that’s the spelling they chose.)

An omelet can be a full one-dish meal, but if you want more, add bread or toast for carbs. Put some strips of bacon on the side (regular turkey bacon is a lower fat alternative that tastes wonderful). Fried potatoes make a great side dish for omelets, too. Though it’s not a traditional combination to my knowledge, Cream of Tomato Soup can be a wonderful starter for an omelet meal.
