Agave syrup: more than a sugar substitute

Spotlight Post: What is Agave Syrup?

It’s becoming a very popular sugar alternative because not only is it very sweet, but because it has a very low glycemic index. Essentially, this means that it won’t cause your blood sugar to spike like some other high-sugar or high-carbohydrate foods.

There’s a lot of other information over there, including some notes about baking with agave syrup. Note that agave syrup has the same number of calories as sugar and may not be appropriate for diabetics. It’s still a processed form of sugar (which is best eaten in moderation or not at all), but it’s a healthier choice than other processed sugars and sugar substitutes.
