BLTs without the bread

If you love bacon, lettuce and tomato sandwiches but are watching your carbs, there’s a great easy way to make them without bread. Get some fairly large but still bite-size cherry tomatoes. Cut the tops partway off (but not completely). Gut the tomatoes so they become little cups. Mix up some mayonnaise and bacon bits in a bowl, and scoop the mix into each tomato, and you have little bitesize treats with the flavor of a BLT without the bread.
Experiment with the filling to see what you like. Add pepper, salt, the gutted tomato innards or anything else that sounds fun. And you can test just one at a time until you get the exact right recipe for your taste buds.
