Broccoli Soup
It doesn’t get anymore simple than this. If you like the taste of broccoli, you can make a soup of it that’s ridiculously simple. It’s basically a broccoli puree, and the ingredients are nothing more than broccoli, salt and water. Even if you aren’t wild about broccoli, you might like this. It’s purely the flavor of the florets, which is very different from the stalks.
Here’s a fun variation on it.
If you don’t want to watch the video, no problem. Here are the instructions.
- Boil a pot of water
- Dump some salt in it to flavor the water (about a teaspoon?)
- Put broccoli florets in the water
- Salt some more on top so they get the salt flavor everywhere.
- Cook for 3 1/2 to 4 1/2 minutes
- Pour it into a colander in a pot to separate the water (which is now broccoli stock) from the broccoli. Don’t have a colander? Just bring the whole pot over to the blender and use a fork or ladel or whatever’s handy for the next step…
- Put the broccoli into the blender.
- Pour the stock into the blender with the broccoli, stopping when the water level is about half as high as the broccoli.
- Blend. Start by turning the blender on and off quickly, two or three times in a row, to get everything mixing properly. Then turn it up on high and blend until it’s almost pureed.
- Taste it from the blender. Add more salt or seasonings, if you want.
He serves it by putting some walnuts and goat cheese in the bowl before pouring the soup over. You can just serve the soup on its own without any garnish. You can also add a dollop of sour cream, sprinkle on some cheddar, or add olive oil to the blender to give it a different flavor. For seasonings, try garlic.
