How to make Shitake mushroom sauce

Shitake mushrooms have a bold flavor that goes wonderfully with beef. Ehow has a great recipe for shitake mushroom sauce, which is very simple and pure. The mushrooms are the only exotic ingredient.

Note that it advises you to choose younger mushrooms, then says that older mushrooms have better flavor but may not look as nice. I find mushrooms are pretty good young or old, but a nice compromise might be to buy them young then let them age in the fridge until they hit the color you find you like.
