Quickest Indian Dinner on Earth
This is something you can do when you’re utterly exhausted, as long as you keep two items in the house at all times.
First you need rice. I get brown basmati in a bag from Trader Joe’s, with the instructions on the bag: basically, rinse through a strainer, then boil for 40 minutes. No need to check it – just go do something else for 35-40 minutes, then come back. You can make this up at the beginning of the week and refrigerate it so the actual meal prep time aside from that will be almost non-existent.
The next thing you need is a Tastee Indian dinner in a bag. (Or TJ’s has their own branded version, but it’s the same thing.) Tastee is an Indian food company that makes super yummy stuff without preservatives. Some of their meals are TV-dinner style, but I like the ones in the foil bag (Punjab Eggplant, Jaipur Vegetables, and others). It’s already cooked – and so is your rice – so all you need to do is heat them up together in the microwave. One bag + rice should easily serve two people with healthy appetites. Tastee also makes little dinners that come with rice, so that’s an even simpler option.
This is also something kids can help themselves to.
Tastee’s meals are all vegetarian. If you want to add meat, try some cooked and frozen shrimp in a bag – another item you can stock and heat anytime. TJ’s and many other stores also have pieces of chicken in a bag. Or you can pick up some fresh-cooked deli meat from the grocery store on your way home and chop it into bitesize pieces. However you go, this is the basis of a super-quick, super-easy, super-healthy meal.
