Ranch chicken, roasted green beans and garlic pasta
by Jen (March 15, 2007)
First, from Meals Matter, we get the centerpiece, Ranch Chicken:
Ingredients
4 Boneless, skinless chicken breasts Preparation
Combine yogurt, milk and ranch mix, mix well. Put chicken in plastic sealable bag, pour yogurt mixture over it. Seal and refrigerate at least 1 hour.
Grill over medium flame 20 minutes, or until done, turning once.
And yes, if grilling’s not an option, other cooking methods will work.
Next, some veggies. What about something green? Maybe Oven Roasted Green Beans?
Ingredients
2 pounds Green beans, trimmed Preparation
1. Preheat oven to 425
2. Place a jelly-roll pan in oven for 10 minutes. Place beans in a large bowl. Drizzle with oil; sprinkle with salt and pepper. Toss well to coat. Arrange green bean mixture in a single layer on preheated baking sheet. Bake at 425 for 8 minutes or until crisp-tender.
We need some carbs now. Potatoes would be awesome, but they take time you may not have. How about Olive Oil Garlic Pasta instead?
Ingredients
Half Box pasta Preparation
Begin the pasta to boiling. Start mashing garlic. Halfway through boil time, heat olive oil in pan and add half garlic and half basil. Low heat. drain pasta and add to oil. Add rest of garlic and basil to taste. Coat pasta. Add parmesan and turn off heat. Keep stirring or serve.
Of course you can add tomatoes or a medley of veggies in a bag. Peppers are always a nice choice for taste, color and crunch.
