Sneaking in Vegetables for Kids

Some quick tips for adding vegetable content when you’re preparing meals for picky kids:
- Use vegetable cocktail in a soup. If a recipe calls for stock, tomatoes or tomato sauce, you can switch part of it out for vegetable cocktail and get the added nutrients from the other vegetables in the juice without affecting the taste too much. You can also add it without substituting out anything else in order to stretch the recipe a bit without thinning the soup as much as you would with stock.
- If your kids don’t like “chunks” in pasta sauces, you can throw in whatever vegetables you like, the puree the sauce to get the benefit of added nutrients that picky eaters will barely notice
- Keep a tray of raw vegetables available on the coffee table – it’s amazing how much will get eaten if it’s sitting right out in front of people, even those who say they can’t stand vegetables

Great ideas, but if you are anything like me (too busy to cook!), try veggie enriched frozen entrees from Full Tank Foods! The products are traditional kid favorites (Macaroni & Cheese, Pasta, Pizza Fondue and Cheesy Mashed Potato Pocket Sandwich) and taste just like your kid expects. But they have the nutrional value of the veggies inside. Quick, nutritious and convenient. Works for me!
