Soba Spring Rolls recipe
There’s a local restaurant I really don’t like much – the prices scream “high quality food” but the ingredients don’t, and the service is very hit and miss. But they have the most delicious Vietnamese Spring Rolls. If you’ve never tasted these, they’re hard to describe. It’s basically veggies and noodles (with chicken and/or shrimp, optionally) served cold in a thin flexible wrapper with some seasonings. It’s the most delicious, fresh taste – very unique. You can dip them in peanut sauce or a spicy sweet sauce.
Whole Grain Gourmet has a recipe for them, using soba buckwheat noodles in place of the traditional rice noodles. Soba’s got more nutritional value and a similarly mellow flavor. If peanut sauce isn’t the flavor you want, try the Vietnamese Dipping Sauce found at the bottom of this page.
