Tapenade Butter

Tapenade is basically pureed olives, capers and olive oil all mixed together. It’s a fantastic dip or spread. Some restaurants just serve it with bread for dipping; others serve it as a dressing for fish or lamb.
There are lots of different recipes for tapenade. This one for tapenade butter is a must-try: it adds butter, sundried tomatoes and anchovies to the old standby (no, the anchovies won’t taste fishy – they’ll just add a rich saltiness to it). Rather than just sitting around as a sauce, this recipe gets formed into a log so you can spread it just like butter.
